So there’s a sinking feeling I get when it’s time to eat and I look in the refrigerator and somebody ate my lunch. Not a good feeling when you’re the only one in the house with known food sensitivities! Usually, I think “no problem, I’ll be creative and figure out something.” But today, I was at a loss and feeling annoyed that I had “nothing to eat.”
After a few minutes of questioning the potential suspects and getting nothing but ‘Not me’ answers, I stopped and took a deep breath. I decided to practice my mantra of being mindful. I took a nice deep breath and decided to choose how I would react from that point on. 😉
I started my usual routine of mentally and visually assessing what I have on hand in the refrigerator and the pantry. The sticking point was I didn’t think I had any protein. Greens and other veggies… check. Ingredients for a quick dressing… check. Avocado and other fruits… check. Wait! I remembered that I’d recently bought a large can of garbanzo beans otherwise known as chick peas (excellent… protein!). And I remembered there was a hummus recipe on the back of the tahini jar that I wanted to try.
I took out the jar and read the recipe. Seemed a little bland. I remembered I had a jar of sun dried tomatoes in olive oil. Aha! From the realization that my lunch was gone to the decision to make hummus was about ten minutes.
I tossed the hummus ingredients into the Vita Mix, along with the new addition of sun dried tomato, and sliced up some veggies. Time… about 5-10 minutes to table. I had a lunch that consisted of protein, good carb, fiber, veggies, and a good fat (olive oil). Enjoy!
Ingredients
- 1/2 cup tahini
- 2 cups canned chick peas (garbanzo beans), drained
- 1/4 cup chopped sun dried tomatoes in olive oil
- 1/2 cup water
- 1/4 cup lemon juice (I used fresh squeezed)
- 2-3 gloves garlic
- 1 teaspoon sea salt
- 1 tablespoon dried parsley (use fresh if you have it)
- 1/2 tablespoon additional olive oil, if needed
Instructions
- Put ingredients in the blender and blend until smooth.
- Makes about 3 cups.
